My story of working with candy started with my first job ever. I worked at a store called The Sweet Spot at Cedar Point Amusement Park in Sandusky, OH, for my first job at age 18. I would help package and sell every amazingly sweet treat – from fudge to lollipops.  When we moved to California, since cannabis was legally available for recreational use, I experimented with it. Soon I mastered the art of combining my passions together.

I eventually graduated with a degree in culinary arts. Now, I work as a sous chef at a small, local steakhouse near Bakersfield, CA, while I raise my two little girls.

 I learned about crafting all sorts of food in my culinary training, but candy has always held my heart. Especially candies that are infused with cannabis and or alcohol. This book is the direct result of my three-year-long experiments of combining my two passions into one.

This book is certainly not for kids.

Candy is made through the simple process of dissolving sugar in water or milk to form a syrup. The texture of candy will be based on the temperature level involved in the recipe and the concentration of the sugar. Hot temperature makes hard candy, soft candy comes from medium temperatures, and cooler temperatures result in chewy candy.

In this book, we will look more closely at the adult form of candy and candy making. While candy has been around for years, it has only been more recently that people have experimented with adding things like cannabis and alcohol to candy and chocolate for a more adult treat.

Here is one of my favorite recipes in this book:

Cannabis Hard Candy

Ingredients:

2 to 3 tablespoons cannabis tincture

2 cups sugar

⅔ cup corn syrup

¼ cup water

½ teaspoon desired flavor extract

Candy molds or baking tray

Candy thermometer

Process:

1. Mix the sugar, corn syrup and water in the saucepan.

2. Allow the mixture to boil and then stir until the temperature reaches 250 degrees Fahrenheit.

3. Stop stirring and allow the temperature to increase to 305 degrees Fahrenheit.

4. Remove from the heat.

5. Add the cannabis tincture and any desired flavoring and/or coloring.

6. Stir well and then pour into your molds or baking sheet.

7. Once the cannabis candies have cooled and hardened, remove from the molds and enjoy..
